Before becoming the gastronomic capital of the world, San Sebastián was a whaling port. From the 12th century, Basque fishermen sailed the Atlantic as far as Newfoundland. Dried cod, txakoli wine and canned fish forged the city's culinary identity.
In the 19th century, txokos were born — exclusively male gastronomic societies where men gathered to cook together. These private clubs, some of which still exist, are the direct ancestors of the Basque culinary revolution of the 1970s.
The pintxo — that morsel placed on a piece of bread, held with a toothpick — was born in the bars of the Parte Vieja. What seems simple is actually the fruit of centuries of maritime tradition, competition between bars and a keen sense of community.
