The Templars arrived on the Larzac around 1150, at the invitation of local lords. They founded five commanderies forming a defensive network on the pilgrimage route to Santiago de Compostela. La Couvertoirade, a fortified village encircled by ramparts, is the most spectacular. Sainte-Eulalie-de-Cernon, with its intact commandery, is the best preserved. The Templars developed sheep farming and, according to local tradition, discovered the aging of Roquefort in the natural caves of the cliffs.
In 1312, when Philip the Fair suppressed the Knights Templar, the Larzac commanderies passed to the Hospitallers of Saint John.
