The Larzac — the Templars' secret land

The Templars arrived on the Larzac around 1150, at the invitation of local lords. They founded five commanderies forming a defensive network on the pilgrimage route to Santiago de Compostela. La Couvertoirade, a fortified village encircled by ramparts, is the most spectacular. Sainte-Eulalie-de-Cernon, with its intact commandery, is the best preserved. The Templars developed sheep farming and, according to local tradition, discovered the aging of Roquefort in the natural caves of the cliffs.

In 1312, when Philip the Fair suppressed the Knights Templar, the Larzac commanderies passed to the Hospitallers of Saint John. The plateau remained a place of mystery — Neolithic dolmens stand alongside Templar crosses, caves shelter geological and perhaps archaeological treasures. La Graufesenque, a Roman site at Millau's gates, produced the most famous sigillata pottery of the Empire — a trade the Templars may have perpetuated.

In 2004, the Millau Viaduct, designed by Norman Foster, spans the Tarn valley at 343 meters — the tallest vehicular bridge in the world. From its viewpoints, the panorama embraces the Larzac in its immensity, with its commanderies, caves, and mysteries. The plateau is a place outside time, where centuries layer like the limestone strata.
