The rebel vintners of Balaton
Mount Badacsony, an extinct volcano with basalt slopes, has produced wine since Roman times. Its volcanic soils, rich in minerals, give local grape varieties — Kéknyelű, Szürkebarát, Olaszrizling — a unique flavor that Benedictine monks from Tihany perfected in the Middle Ages. But in 1541, Ottoman occupation transformed this millennial tradition into a capital crime.
Islam forbidding alcohol, the Pasha of Buda promulgated draconian edicts: vine destruction, ruinous fines, imprisonment for wine possession. Yet Hungarian vintners of Badacsony resisted. They dug secret cellars in volcanic rock, camouflaged their vats, organized smuggling networks to Austria. Mátyás Folly, descendant of a vintner family established since 1387, became the leader of this viticultural resistance. His cellar, carved in basalt 15 meters deep, could store 30,000 liters. When Ottomans retreated after 1683, Folly bequeathed his sons a detailed map of all hideouts, but it mysteriously disappeared at his death in 1703.
