Dom Pérignon — the monk who drank stars
Dom Pierre Pérignon (1638-1715) was cellarer of the Abbey of Hautvillers for 47 years. Contrary to legend, he did not invent champagne — the bubbles already existed. But he perfected the art of blending grape varieties, improved pressing techniques, and developed the use of cork stoppers to maintain effervescence.
His winemaking registers, meticulously kept for nearly half a century, constituted a unique treasure of expertise. After his death, the monks continued to use them. During the Revolution, when the abbey was closed and its property dispersed, the registers disappeared. Some were found in local archives. The most important — containing the secret blending formulas — remains missing.
The Avenue de Champagne in Épernay, built in the 19th century, unites the greatest houses: Moët & Chandon, Perrier-Jouët, Pol Roger. Beneath their bourgeois facades, the caves extend for kilometers. In 2015, the "Champagne Hillsides, Houses and Cellars" were listed as UNESCO World Heritage.
